For a correct understanding of the world of Ibérico ham and the products that make up its extensive range, it is important for consumers to know their key features in order to achieve maximum enjoyment from these real gastronomic jewels.
Under Royal Decree 1496/2007 of November 2, present in the BOE no. 264, the following are established:
Procedures for the proper preservation of wooded Dehesa (pastureland), designed to avoid endangering the delicate balance between pig production and the particularly fragile ecosystem of the Dehesa.
Products that can be classified as “Ibéricos”.
Racial and animal feed criteria for animals.
Control and traceability procedure from the farm to its sale to the final consumer.
Mechanisms for control of products through inspections and certifications made by independent bodies with the corresponding supervision of their actions by public authorities.
While setting up the Ibérico Coordinating Board for monitoring and harmonizing the actions foreseen in this Royal Decree and other regulations that may be developed in this field.
