For a correct understanding of the world of Ibérico ham and the products that make up its extensive range, it is important for consumers to know their key features in order to achieve maximum enjoyment from these real gastronomic jewels.
Carcass. This is the body of a slaughtered, bled and eviscerated adult pig.
Ibérico Products. Those derived from the different parts making up the carcass.
Dehesa. The geographical area with predominance of an agroforestry system of land management based primarily on extensive livestock exploitation of a continuous area of Mediterranean grassland and woodland with a tree cover of at least 10 trees per hectare occupied by “Quercus” type hardwood species such as Holm Oaks or Cork Oaks.
Montanera. This is the type of diet of animals based on the use of acorn and pasture resources specific to the Dehesa. This type of diet extends from autumn to late winter in particular.
Iberian Breed. The mother should be a pure-bred breeding Iberian Pig and can obtain Iberian ancestry through cross breeding with a pure bred breeding male Iberian or a Pig that is at least 50% Iberian.
