The purpose of the standard is to establish the quality characteristics to be met by products derived from the quartering of the carcass where it is marketed fresh, as well as hind leg ham, shoulder ham, and Ibérico pork loin (caña de lomo), in order to use the designations of origin defined according to breed and diet.
This standard helps to preserve the quality and competitiveness of these traditional products in a transparent market in which both the rights of consumers and those of companies in the industry are ensured.
Revisan Ibéricos is certified by the Ibérico Ham Standard for cured products derived from Iberian Pigs covered by the standard, such as hind leg ham, shoulder ham, and Ibérico pork loin, and it is also distinguished by being certified by the Ibérico Ham Standard for Fresh products derived from Iberian Pigs, such as lomo (loin), presa (shoulder cut), secreto (pork fillet), pluma (pork belly), solomillo (sirloin) or carrillera (Ibérico cheek of pork). |
