To the southeast of the province of Salamanca, at an altitude of more than a thousand meters, Guijuelo provides the name and resonance to the most important Spanish region for artisan Ibérico cold meats. Due to its membership of the Guijuelo Designation of Origin Regulatory Council, Revisan Ibéricos ensures that its Ibérico Hind leg and Shoulder hams meet the highest and most exacting standards of quality, it being the Regulatory Board’s Technical Services which establish the individual classification of hind leg and shoulder hams covered in this Designation of Origin.

The rules governing the Guijuelo Designation of Origin Regulatory Council have been created on the basis of the following legislation:
